Description
In this workshop with chef Marente van der Valk you will learn how to make a start in the world of foraging; What can you find around you that you can eat and prepare? We will make pasta and ‘laminate’ it with wild flowers and plants and, for example, a pesto of garlic. In addition, we will collect and prepare a wild salad and learn to ferment garlic.
All ingredients are included in the price and we will make enough so that everyone can take something home afterwards!
Marente van der Valk is a culinary artist and chef from the UK/NL. She graduated from an MA Design & Environment at Goldsmiths’ University of London in 2012. Marente currently coordinates the Food Lab at the Jan van Eyck Academy in Maastricht (NL). The Food Lab was created to offer a multidisciplinary platform to chefs and artists with an interest in food. The elements that are central to Marente’s work are seasonal and organic products from local growers and producers who invest their time to make agriculture more sustainable. In addition, a love for new experimental approaches to traditional cooking methods and a love for nature and increasing her knowledge
